pie colors

The pie chart is just a set of patches.. Try

h = pie (....)

and then get(h(1)) and examine the handle of one of the patches. The
facecolor of the patches is set to "flat" and so the color is changed by
the colormap. So type something like "colormap summer" will change the
colormap of the patches. Alternatively set the patches to a fixed color
individually with something like set(h(1),'facecolor','red')
